Considering he is getting a new truck, it will be the double overdrive 68RFE.
Ordinarily I think a lot of people get the 4.10's when they would be happier with the 3.73's, but with that particular transmission I would personally go with the 4.10's.
Having driven one of the 68RFE's with 4.10's it turned lower RPM on the freeway than my old 03 with NV5600 and 3.73's, and considerably lower than my current truck with the G56 and 3.73's.
A 68RFE and 3.73's would really be turning slow at legal highway speed in 6th.
From what I've seen, MPG varies much more by road speed than by RPM with these trucks, and having the pumps in the tranny spinning a bit faster I don't think would hurt anything, plus pulling harder in 1st off the line.
Anyway, pin weight wise, you may find with a toyhauler having less weight in the garage area will actually raise pin weight.
Mine has an 80 gal water tank ahead of the axles, and a 14 foot divided garage behind the axles. I've never weighed it with the tank full and only one quad in back, but my truck's rear axle comes in around 6500 to 6700 with a couple quads and a big motorcycle in back.

I'm going with Jeff on this. He beat me to this. You guys are talking manual trannies and the 48re which isnt what he even asked. He asked with an auto on a new truck.
I would get the 4.10's as well. You have two overdrives which people that have manuals and the 48re's dont have. Instead of running 1600 rpms at 70mph, now you will be running 1700. Not that big of a deal. A buddy bought an 09 and was towing occasionally and he couldnt find 3.73's. He got the 3.73's and now wishes he got the 4.10's. ONly reason is that he put on 35" tires and tows. He tows 5 times a year. Plus he doesnt tow that heavy. I would think the 4.10's would help a lot towing.
