Those are terms that describe tweaking on the injection pumps on the twelve valves. The #100 is a different profile of the fuel plate inside the injection pump. I'm a VP44 guy but some of these 12V gurus will chime in here soon and give you better help than I can.

I found the diagram that is frequently used to answer this question (courtesy of another thread). The numbers are used to describe how aggressive the fuel curve is. Although I've only been on this site for a few months I have heard that a #10 plate is enough to teach you how expensive tires are but a #100 plate is just wicked. Hope this answers your question!

B.White - Where did you get your Bri-Mar? I actually work for Bri-Mar MFG. so I just thought I'd ask.

The zero plate is max travel (without rack travel mods) anything extending further out is defueling. I know not the best explanation, but basically the plate is the full throttle stop (I know the trucks don't technically have a throttle) More travel=more fuel.

Hope I helped a little

Glad it made sense! The P-Pumps are really fairly simple in operation, at least the basics are.

It is pretty easy, just pull off the AFC housing, the breakoff screw can be a pain, I used a chisel to make a slot on mine. 4 screws, slide the bracket for the shutoff solenoid out of the way, and lift the housing. The plate is right there. You could run a 10, and just put it in the stock position, or even pull it back a bit to make it a little milder.

It would be fine in the cold and hauling.

AFC is Air Fuel Control. This is where the intake manifold pressure is plumbed into the fuel pump. The fuel pump holds back fuel until the intake manifold is pressurized. This is done to reduce smoke.
