Ok, now that you believe that people have actually had the pump pin fail, let's back up here a bit- Filling in your "signature" will help everyone see at a glance what you have.
I can tell you about towing. I do large and heavy (sometimes > 20,000lbs.) loads often. The UP HILL part is going to be what gets you EGT wise. I got by with a #6 plate, K&N filter, and modified exhaust; though on uphills and even steeper grades, on the edge. I think you would need to be very careful with the #5. Could need to modify your turbo, and should go ahead and get an air intake system like the Scotty II with outside cool air inlet.
I currently have a #5 on the way, and could possibly make you a deal on my #6, if you're not in too big of a hurry (PM me, if you want). Please note that I am planning fabrication of a set of twins and that is the only way I can support the #5 plate and 370s, and still be able to tow uphill.

I took my plate out for a month or so and the egts did not go up any and I think it lost a bit of power. I just put the #10 back in and adjusted it to what Piers said. He said with the 94 pump that full forward would not gain me as much and just a hair from full forward. The truck runs stronger but has less smoke :-[
