How much hp? Or how much lag?
I'm at 411 on a dynojet, 430 on a load dyno.
With your setup, the 215 pump will be a little hotter, but I don't see if you have any bigger dv's. Most 215 pumps don't need them. 181dv's are fine with 300's and 370's. Which do you have, the auto or manual shift? Manual shift have 181dv.
I'm assuming you'll want the 100 plate centered or forward, afc full forward? Gov arm adjusted ok?
I would expect 350-375hp from a hx40,300's,stock dv and 15 deg timing.
Timing, 15-17, anymore its a per truck basis call, harder starter if you get to high, more cylinder pressures also.
stock hx40, max boost 40psi, anymore you'll break it.
Honestly if your looking to replace the sticks, go 370 and be done with it. Get a hx40/pdr40 or comparable and egts will be fine. hx35 will be toasty with 370's.

Egt Max is really an opinion of each owner. To me its 1200 deg.
Towed 9k total bumper pull once, pallets of blocks+trailer, nice headwind, 95 deg day, 5th gear, a/c full.
Flat, 65mph, I was seeing 700-900, 12-15 boost.
Minor hills, steady 65mph, 1000, 17-19 lbs.
Drop a gear for bigger hills, boost and egts go up, 2500 rpm,
boost about 24, egts about 1000-1100.
My foot dictates the egt, at anytime I can make it pull harder that 65mph, I wasn't in any hurry, just takin it easy keeping it steady, passed a Powerstroke to boot.
Running around empty, daily hwy driving, I see 400-800, 2-10psi.
I still get 22mpg if I keep it under 60mph.
Playing around 600-1200+ egts, 2-40psi. By the time 1200 hits, I'm way over the speed limit, so I usually never have to worry about going over egts.
Empty, 4th, 5th gear seems to be the only way to get past 1200 egt.
By the time you shift WOT to 4th, egts are around 1000.
On the load dyno, the boost and egts and rpm's go up the same, so at 1200 egt, boost is 40 and wastegating, smoke does clear up a bit near 3k redline.
I'm on the little 160 pump, take that into consideration.
My hx40 has about 6 dyno runs, and 43k on it now, no shaft play at all, I never bark it, always easy out of each gear, and let it cool down.
The 40 is laggy, but once its past 10psi, its flies and cools well. Just treat it good, it'll last a long time. no drugs.
My 40 has had a easy life, 2 lane roads 55-65mph roads, no racing or crazy stuff. An occasional blimp past 30psi, but most of the time I keep it under 30.
I don't need a traffic ticket.
Mind you my setup can clear out 3 lanes of traffic, hx40 lag + I have everything plate/afc forward. Its a smokn beast from a rolling 35mph 4th gear 0 boost. But I don't need the citizen smoke police after me, its more for a "cummins howdy", or for tailgators. If no ones around its fair game for mosquito patrol.
I want to upgrade to the PDR40 one day, just to ease my mind on shaft breakage.
My setup is fun, Its still very realiable, not much money sunk into it to boot. I like to consider my truck a sleeper truck. Looks plain on the outside, but I'll be passing a few Fords/Dura on the passing lane pulling a hill.
