What engine & p-pump combo did your transplant?
Lots of possibilities
160 hp pumps can "run out of fuel" due to small delivery valves.
Timing in all combos should be bumped to no less than 15°
Overflow valve not holding pressure?
Lift pump not keeping up.

Agreed, my truck did the exact same thing before I turned up the timing (lucky me I landed a cali auto [12.5* stock timing] ). You'll see better power, smoother cold weather running, and most of the time better economy.

On another note: anyone ever think of throwing on some 7 hole nippendenso nozzles on their injectors? Bosch and Nippendenso are one in the same just one is german the other is japanese and the parts all interchange.

not really; but I have a wholesale account with Diesel Injection Services. If they work out to be a good power adder, which they easily will (plus have better economy); I may just offer them to DTR members at just a little above cost 5-10% mark-up rather than 30%. Bosch tends to run a little bit cheaper than Nippendenso but, that's because much like any other Japanese part, shipping tends to run the prices up.
