The other members have already given you some very
good advice on the 12 valve Cummins Engine. Whoever
told you that "you can't make a 12 valve much more
powerful than it was from the factory" is flat out wrong!!!!
Some of the pulling trucks are probably close to or over
1000 H.P. DTR Member "HOHN" gave the example of the
drag race 12 valve too!!
You said you thought "350/700 would be enough for you."
That is very easy to get to!! I have a 96' Dodge CTD 12
valve (signature below) and I will give you the breakdown
on how I personally got to 381 H.P. I am over that now,
but I also have more fuel too!!
Here is what I did to get 381 H.P./1089 Torque:
1.) P7100 pump "recalibrated" on a Bosch Test Stand
(Fuel set to 300cc's)
2.) 370 Diamond B Marine Injectors
3.) Scotty Air System
4.) TST #5 Cam Plate
5.) 3K Governor Spring Kit
6.) Modified HX-35/12 Turbo
I still have the dyno sheet from that run, with those
modifications. As I said, it is not hard to make the 12 valves
put out power!!

If you don't want to get carried away for now, just spend a couple hundred bucks on a calibration plate. That will get you a very noticeable improvement in hp and torque. Of course, it would be smart to invest a bit in gauges and trans. improvements when making any power upgrades. And a high-performance air filter will help allow the power upgrades to do their job.

Didn't Joe Donnelly make 799hp and 1000+ft/lbs on #2 Diesel only out of his 12V. And it was a daily driver!!
12V's can make some serious power without having to go to a bottle to get you there.
