The Perfect Hard-Boiled Egg
Ok, I love hard-boiled eggs........but cant seem to make them where the shells dont stick to the egg, making them realy hard to peel.....

Put a couple tbs of salt in the water when boiling them (softens the shell). Then, when they are done chill them rapidly in cold water even using a little ice doesn't hurt (helps to seperate lining of egg from inner shell). This technique doesn't work too well if making Easter egs however, cause the egg shells split a lot due to the fast coolng process.

Cheap eggs. Have a long talk with your chickens, then follow the directions below.
Start with eggs & water at the same temp. Place the pot on high heat. Bring the water to a rapid boil, turn the heat off and cover pot. After ten minutes, remove the eggs from the water and immediately soak the eggs in cold water. This will stop the eggs from cooking by their own heat, and will also help with peeling them. Keep them in the cold water for 30 seconds or so, or until you can handle them without shouting "Ow, ow, ouch!!" and passing them hurriedly from hand to hand. While they're in the cold water, a layer of steam develops between the shell and the egg white. The steam makes peeling an egg much easier.

In the Phillipines they take duck eggs that have been incubated for 2 weeks (the baby ducks are well formed) and bury them in the sand for a month or two. Let them ferment in their own jucies and eat them as "royal" breakfast food.
I wanna meet the first guy to try those, and say "Hey! these balooks are pretty tastey!"...... Then the second guy to say; "Hey! I want some of that!".

Get yourself a boiled egg cooker. We got one and love it. You just add a little water and then set the dial to soft, medium or hard boiled and leave alone. Once the thing chimes, take out the tray with the eggs and put them under cold water like above posts. Cool gadget that works really well. This is very close to the model we have. This is called Balut and is considered a Filipino aphrodisiac. I had a "piece" of 1 back in the Navy. I just couldn't do it, but the guys in my squadron that grew up on it would have them all the time.
