Good evening all y'all. Financially and effortwise, today probably wasn't worth it, but the outcome is most awesome. DW and I spent 7 hrs making 20 lbs of wieners. We really like hotdogs but DW is allergic to nitrates and sulfites (the whole reason we got into sausage making in the first place) and my niece has celiac disease so she cannot eat most store bought wieners also.
We made the wieners with free-range turkey meat from the farm just up the road from us and used absolutely no artificial colors and no preservatives. They are simmering right now and as soon as they cool they will be vacuum packed and frozen.
We tried one a few minutes ago and they are most awesome. Who knew that two people could be so excited about hotdogs.
Tomorrow we are turning the rest of the turkey (another 20 lbs) into a mixture that the recipe says tastes like Thanksgiving in a casing. I will let you all know how that tastes tomorrow afternoon.

As for the economics, the meat was $8/lb and it took us 7 hrs of work. So, economically speaking, they probably are a whole lot of money and work for a darn hotdog but DW and I are happy with the results and my niece will be so happy to have a hotdog, the next time her friends do.

Scotty, sorry I'm behind on this. In North Platte there's a nice little place called Penny's Diner, good food there. If you have a steak make sure to try some Country Bob's original steak sauce. If you don't see it ask for it. The Super 8 in NP is clean and reasonably priced. If the kids are along Fort Cody is good for some history and trinkets. There are 2 locomotives in Cody Park, a diesel-electric and a steamer. Also, NP is home to the largest switch yard in the USA. If you by chance get near Flagler, CO make sure to stop at the I-70 diner. It's a refurbished Starlight and it's very well done. The chef is a Vietnam vet and an outstanding individual! He's also has quite a reputation as a chili connoisseur. He has somewhere north of 45 awards for his chili. If you get there, ask to meet him. Pink Caddy on a tall pole out front, pretty easy to spot.

Slev, listen to the voices, we need entertainment!

Got my truck back up this afternoon. It's not done but it's drivable. I figured of turning the rotor but a 2" crack in the outer face nixed that.

He made it to Ogalalla last night. I'm headed to North Platte to catch him for coffee. If my phone will take a call from a Canadian number. I don't know if it will (prepaid).

That's not just a steamer at Cody Park. It's one of the Big Boys. 4-8-8-4 wheel arrangement, over a million pound operating weight, designed to haul a bunch of freight at 70 MPH. UP just re-acquired the one in California with plans for restoration.

I like that Fort Cody admits that it's a tourist trap.

Gud morningk to all. Gorgeous morning down this way but warm. Sat in Lanai and enjoy my coffee, reading the paper and the Sand Hill Cranes begging at the screens, the hawks diving for lizards but they also got my pet black snake - - fooey - - we enjoyed one another. Had fun with him - - he would sit (well, lay) and watch me catch lizards for him, then come to me to get it and sit right there and down that sucker.

Hey, never heard that guy before - - enjoyed that. Marked it for more later. Thanks - - and yes, we are singing it around here. Great call from the DIL last night - - she sounded much more together and relaxed. Went on and on downloading everything that is happening with our little girl. We felt much better hearing from her - - she has not been able to talk much with us - - very distracted, which I guess is understandable. I would be distracted just having the twins, much less the news about Ianna.

I saw it through the fence but didn't realize how big it was. We never got to see it up close, the park was always closed by the time we got done working.

T-Rad, poor doggies. I have never been able to figure out why some dogs are terrified of storms and some don't care. Given the summer we have had, with storms almost every day, we are very happy that our new guy isn't afraid of storms. His sister (who lives with DW's parents) freaks out every time the thunder and lightning start up.

Sometimes it's in their genes. Any samoyed dog I've known would eat his way through anything to get into the house during a storm.

I know why the older dog gets scared, he was at my stepson's house when that tornado that hit Tuscaloosa, Al in April of 2011 came through. When it came by the SS's place it was roughly 3/4 of a mile wide and missed their place by about 1/4 mile. I believe the younger one is just feeding off the older one.
