4 All in all it’s good meat but I do not recommend that you kill the biggest one that you see. Instead pick a young one about 25-35 pounds. If you kill a larger one keep it in a cooler for a few days and drain the water daily and add more ice and a gallon of vinegar (this will help to start breaking down the tuff meat) then make sausage.
