Max boost is set by the factory, since you're stock - I doubt you'll see the high side of 30psi
Pre-turbo EGTs generally aren't a problem unless they exceed 1300*F for extended periods... high EGTs themself aren't a problem, but they are a good indication of how much heat energy the pistons are absorbing - that's the critical part.

Fuel pressure gauge is the most important one for your truck, so you can make sure the lift pump is working properly to supply your engine's VP44 injection pump. LPs usually fail first (~ $150), and if not replaced, will take out the IP (~$1500). Even if you already have an aftermarket LP, it's still a good idea to monitor fuel pressure to the IP.
Tranny temp gauge is good for towing, or low-speed maneuvering with an RV/trailer.
Diff temp sensors aren't necessary - but they sure are fun!
I like having a "cockpit" - so I have pre-turbo EGT, boost, oil pressure, oil temp, post-turbo EGT, fuel pressure, tranny temp, differential temp, rail pressure, intake manifold air temp, water/meth injection pressure, and of course - nitrous pressure.

The transfer case shares ATF with the tranny, so it'd be redundant... you could always install a gauge to monitor the HydroBoost fluid temp, but again it'd just be something to look at.

Repeat, get the FP gauge ASAP. The LP fails too often. Cummins has a camapign (LP)kit for $65 that you can carry as a spare. get the Vulcan kit to imrove the fuel flow; it also eliminates banjo bolts and provides a good point to hook up the FP gauge. Fp should be over 5 psi at all timesm nay panic at 7 or 8. With the Vulcan, it moves the LP to near the fuel tank, making it much easier to change(IE, 5 minutes).
