They will rub a little on the stock rims, but nothing too terrible.
Check out tires with the following sizes for something a tad bigger than stock, that shouldn't rub mounted to the stock wheels.
285/70/17
285/75/17
295/70/17

I have a 40ft enclosed gooseneck race trailer that I pull. I HAVE pulled it with the 315 BFG's and I choose not to do it. First off the reduction in effective gear ratio hurts the performance. I can shudder the trans (auto) if i get on the gas hard with the 315's. The truck likes to run in the 2100 rpm range when pulling my 9000-9500 lbs. On stock tires it likes 70-75 mph, which is still a bit fast probably pulling a trailer.. but with 315's actual speed is 80 or so to get to "Sweet Spot". Finally i noticed WAAAYYYYY too much "squiggle" in the tires. The soft tall sidewalls are NOT confidence inspiring even going thru a curve in the road............Just my $0.02

I've had pretty much the same experience as Lawdog.
It raises the gear ratio and means harder starting out from stops and less OD. So, it just doesn't work as well unless you are running 4.10s. The auto just doesn't like low RPM towing and the TC is the first to start slipping in OD lockup.
The only time the 315/70 tires will rub on stock wheels is at full lock turns. Get some H2s and that problem goes away. The 315s look good and work well off road, but they are not good for towing. Plus they steer the truck much more than 265s or even 285s do.
