None of it is rocket science. Just jump in there and do each thing separately. IF you have any questions, just post a thread on here.
For the diffs.....Just go to Auto Zone or whereever you want and buy enough GL-5 rated Synthetic gear oil of your choice in 75w90 or 75w140. I use Mobil 1, but there are plenty of good ones out there. Even Supertech at walmart is fine.
Put a pan under your diff......and start taking out the bolts. The fluid will drain. Wipe it out clean and spray in some brake cleaner. Wipe again. Replace the diff cover and reuseable rubber gasket and just snug the bolts (don't overtighten). Fill with new fluid until it is at the fill hole. Put in the plug and your good to go.
On the trans........just go buy some ATF +4 fluid from the dealer or wherever. Buy a transmission filter. Remove the pan. You are going to make a mess, so just get ready and wear some old clothes. Replace the transmission filter with the new one. Replace the trans. pan and refill until it shows good on the dip stick. Just allow yourself plenty of time the first time and once you do it you will see there is really not that much to it.
IF you want to spend the extra money you can put on an aftermarket double deep trans pan and/or diff covers that all have drain plugs on them. That will make it easier and they hold more fluid. But not completely necessary.

Gonna be changin my motor oil and filter fairly soon, in about the next 2k miles or so. Does everybody change theirs every 7500 miles like it says in the owners manual or sooner? I was a big fan of mobile 1 when I had my Subie Sti but I was wondering if there was any recommendations on a certain brand of motor oil and filter now that I have a Cummins. Is royal purple really worth the extra $$ or even mobil 1 for that matter? Can someone recommend a good website oils, lubes, etc.?
There are all kinds of oil war threads on here! Just do a search and you can read for days.
Personally I use Shell Rotella T 15w40 and change every 5k with a new fleetguard Stratapore oil filter. Many guys go much longer with no problems. Many guys also swear by synthetic brand oils too.

I just checked the manual, and the transfer case is due first time at 60K, the axles (both) are due every 15K and the specs call for "Syntetic, GL-5" on all 2500/3500 models.
