Clutch material is glued together and the water can cause the glue to weaken.
Anyway I know that because i had a trans cooler go out on a fairly new S10 out of warranty and i drove it with water in it for quite a few miles (maybe a week or two) after the check engine light came on. It shifted fine but something I can't remember happened and I checked my fluid and it was milky. The water actually fried a sensor in the tranny is why the check engine light came on.
The thing worked just great after flushing it out and replacing the rad/cooler. The guy at ammco tried to scare me into rebuilding it . I sold it at 90K miles and put about 40K on the water soaked tranny lol.
