How high is too high?

As far as EGTs, my limited experience has been that as long as I keep it below 3100 rpm the EGTs don't climb over 1400°.

I had a stone stock, as in stock down to the paper air filter element, 04.5 dually. It would flash up to about 34 pounds, then settle down at about 29 or 30. The 03's probably don't run as much boost, as they don't fuel as hard either.

I've got a video from last Saturday night, pulling my ~10,000lb toyhauler up a ~6% grade. It shows me doing 70mph at ±2800 rpm in 3rd. I'm pulling 30psi and about 1300° (pre-turbo). EZ set on level 2, boost elbow and no other mods to my SO . Needless to say, I'm very pleased (keeping up with normal traffic just fine ). Which is more than I can say for my friend's: Older non-powerstroke furd, newer 6.0l gasser chebby, and 454 gasser Burb. They all reported around 35-40 mph while pulling less weight.
The video is kind of fuzzy (since it's dark) but I'd be glad to post it somewhere/email it if anyone is interested.
My (limited, since I just installed the gauges) experience has been that pedal position doesn't drive egts, but rather rpm.
