my guess is that this happening because you are using the stock control arms. i know 2-3 inch spacers isn't a big jump but it might be right at that point of danger. you see if you keep stock arms on and start to lift your truck the center line of your steering nuckle starts to turn twords the road rather than traveling w/the road. wich mings when you hit a bump at speed it actually turns your wheel rather than just push it up against the suspension. newer aftermarket shockes will help but only for a while the only way to stop it is top fix the geometry.

its easier to draw it out with a radius on paper and visualize it that than it is to explain it with words, but i tried
