Coolant temp a little high?
Last summer I was running 195-200 in the summer in traffic unloaded. This year I keep seeing 200-207 same senario. I did cut off both barbells on my thermostat to help keep from blowing out freeze plugs. This wouldnt effect temps would it? I cant see how it would. 200-207 just seems a little warm unloaded, would this concern you guys?
Oh and once I get rolling a little ways it drops to around 195.

I see similar temps when stuck in traffic. I don't think you have a problem. When I clean my truck I try to really clean the fins of the radiator with the hose. Maybe you're getting a little dirt built up in there...?
