What you want is called a horton fan clutch. It's a clutch for your fan that is electro-mechanical so it turns off and on electrically like an A/C clutch. You install a temp sensor and when your water temp goes over 200 it automatically engages the clutch. The benifits are many:
1. The fan is not turning at all when it's off so you get a little more economy and the truck warms up faster (which is good for people like me that live in very cold climate).
2. The fan can be overriden in the cab to cool down the truck faster.
3. The fan works better then engaged since the stock clutch doesn't cause the fan to ever spin at full speed.
Then my clutch finally goes that's what I'll be putting on. I've seen them work and they are a very nice setup.

So the fan just sits there, like you could stick your finger down there and turn the blades by hand? (when not engaged with the motor running)
