yes make sure you get an egt gauge since you pull a trailer. It would help to know how hot your rig is getting. I have ran a triple dog and a power pup on stock trucks and have had no issues out of them

the tow setting would be good with tires as big as you have to. I would say performance setting not hooked to anything. I wouldnt go higher than that if you dont want stuff broke.

Yah, I think you did it backwards, get the gauges first cuz you just know you'll be tring the higher settings, just to see how what it's like and without a pyro gauge you risk damaging something.

I agree with all these guys...at least invest into a pyro gauge to monitor EGTs just to be on the safe side. But if you're going to put it on without getting gauges, I really wouldnt try any setting besides the 1st one which is Tow/Economy...

I did this same mod backwards as well. Almost 6months in fact b4 I got gages. Here's my 1st hand knowledge:
Extreme- Only rarely for playing around or doing a little racing *Be Very Carefull though and play at your own risk*
Performance- Good for everyday all day better performance unloaded (if you are sensible and don't dog it out!!!)
Tow- Hardley noticeble improvement over stock so I never used it but I'm sure it's ok for towing up to max GVRW

If you need a more economical source for gauges look at this:
http://www.quadzillapower.com/products/recon.html
I promise you will not find a better value for gauges. It also has a lot of features. Check out the DTR store and other Quadzilla vendors for pricing you will probably be shocked!

I've got 2 pyro guages (one on the A-pilar and one with the Attitude) and I run the Edge Juice on level 5 nearly all the time and I've only seen it in the 1,300's once...maybe twice tops.
I personally think you'll be fine to run it for awhile w/o gauges if you drive sensible. I probably drive my truck like a granny compared to some of these guys, but I just like having a 7,000 lb. truck that accelerates as easily as a 2 liter turbo charged VW. I never thought it would be possible, but these trucks are amazing.
