You are right, never "steam clean" an engine!!!
Only use distilled water, You also must only wipe it down with micro fiber towles, but be careful not to move any of the harnesses around too much, this could cause problems. Also your high pressure lines and fuel rail must be only scrubbed with a new crest tooth brush, soft grip is preferable, you cannot use one of the hard brissle one's. Also a side note, a oral-B will work, but not as good! Also you must hand dry it as soon as possible, so water won't seep through all of the pores in the engine block, this could cause an engine oil intermix condition and that would be very bad!!! If for some reason you have already "steam cleaned" the engine you are not up the creek with out a paddle, you should first use a shop "wet dry" vac. and try and get all of the stading puddles of water, then use the micro fiber towel to blot up all of wettness.

Just find you a good degreaser, it will coach you through it.

I use a mix of ammonia and mr. clean or ammonia and simple green 50/50, soak it on, wait 10 min. soak it again, when engine is warm it works better, get a gardent hose with a good nozzle on it and go at it, need more do it again, maybe use a stiff paint brush on the stubbon stuff, cover the electrics as good as you can, then when dry I soak it all down with armor all and then wipe it down. you can use a pressure washer down low on the running gear and some of the block but you will peel paint so easy does it.

Simple Green AND CD2!!
I'll try and post pics, this combination, i swear by. Looks like it rolled off of show room floor and that was after visiting one of AK's favorite mudholes! The CD2 repels dirt instead of being an attractant like wd-40 or armor all, any of that stuff

Spray it with your favorite flavor of degreaser, twice if necessary, and power wash the sucker! I've pressure washed every engine I've owned. Don't lose any sleep over it. If it makes you feel better, don't blast the ECM. Ever drive your truck thru deep water, blinding rain storm, blizzard? The engine and everythign around it gets very wet and the truck keeps running.
Or do it like 6.6L eater.....sometimes I do that too!

simple green. i had to use a rag and soap on the battry tops, and those dirt-accumulating areas by the hood hinges, and the hood latch.
i also drink a beer while spraying a light stream of water on the condenser (from top to bottom so the fins dont get bent)
