I have new rubber sitting in the shop, and I was thinking about getting an allignment before the tire swap. The truck goes down the road fine, but I have been wearing tires like crazy....question..on an 05 4x4 can they do caster/camber? or just the toe?

Caster is easy, there are cams on the lower control arms that can be adjusted. Camber can be adjusted with offset balljoints (NOT recommended IMHO). If the camber is way off, you have bigger bent axle housing problems.

tires are wearing pretty evenly, just wearing out quick. mich ltx
are quite shot in 35k. front hub u joints were done last year, but truck never drove wierd, just clunked when the u joints went south.,

Assuming nothing is bent/broken/wore out, toe will have more to do with tire wear that anything else. Too much toe usually wears out the outside edge.
You're better off getting the alignment done with the new tires.
