Cooling problem

So my truck doesnt like to stay cool bombing around the city. Been fighting with it for years. It has a brand new fan clutch, thermostat, coolant sensor, acs recharged, toon the rad off and cleaned it out, electrical checks out, everything we can think off.
Scanner was on it, start it up, fan matches rpm with the motor. As soon as u touch the gas pedal it immediatly quits. Cant command 100 percent out of it. Highway drivin it does alright, but city she'll heat up fast and i never tow anything so it shouldnt heat up like that. Anybody got any more ideas???

Silly question, but did you bleed off the air in the cooling system.

You don't bleed it from the radiator cap if that is what you/they did...
