Engine box cleaner

What is everyone using to clean under the hood and engine. I just returned from Alaska and mine is pitiful. Need someting that will not hurt the paint but will get the grime.

Thanks for the info. I knew that they have a lot of road repair and construction. What I didnot know was they keep the roads wet and they mix sodium cloride in the water. I been under the bottom with a bucket of water and a brush for a week. When the mud dries its like a brick.
