In cab t-stat read wrong

I got in my truck the other day and the temp reading on the display was -1*F, then 0*F then 1*F (I know that the temp was no where near that cause about a half hour before it read nearly 60*F) After driving it about a mile is was back to what I expected it to be.

Does anyone have any idea what could have happened to make it read that far off?
