16.4 mpg

i just rebuilt my trans and t case put a new south bend double disc in , i have a afe filter , a stainless steel air plenum , and 4" stait pipe other then that im stock , i checked milage after 350 miles , 200 of which were interstate driving running 70 mph and the other 150 miles were country road driving 16.4 mpg with a empty truck and no trailer , seems kinda low . on this same trip i used to get 17.5-18.5 mpg

I am guessing you have 3.55 gears? It seems a litle low, you may want to check another tank or 2. Seems like some of these 2000 2500's can get 20+ mpg. Sometimes some of the sensors need cleaning. I guess the VP as it gets older, seems to lose some efficincy
Of course, slowing down to 60 or 65, if you are not in a huge hurry, will give 1-2 mpg as well.
Sometimes no one knows why the mileage gets worse.

It could be that you are starting to get into the winter fuel (less BTU's). Also, clean your IAT sensor. There is a sticky about this.
