Im actually thinking of going the other way because it seems like my vinyl traps the moisture underneath. I was thinking the carpet might breath better?

I just replaced the carpet in my truck...purchased through stockinteriors.com. I went with the medium grey, which is close to the stock color in my truck. The fit was fantastic and it made a huge difference in the interior look (and smell). The same company offers vinyl, but I just chose to use big gnarly floor mats. I would advise you to Dynamat the bottom of the truck while you have everything out as no replacement is going to compare to the layers and layers of jute padding/vinyl that came stock.
RAAMat is less expensive and better quality (I had some left over from doing my Challenger). The guy who makes it is an audiophile and makes this for audio purposes but it will help reduce interior noise and vibration from these trucks in the same manner.
There is only one manufacturer that actually makes the carpet (ACC) but several different resellers. I found stock interiors pleasant to deal with as well as having a good price (I paid around $240 for the carpet with mass backing and a 3x6 roll for the rear of the truck). I only needed to trim about 2" off the front of the carpet and it fits like a glove. Much easier to install the carpet than it is to take the seats/belts out.
