You wouldn't do it twice. With the pedals out of the way you can get a ratchet on the mounting bolts. With the pedals installed your laying on your back turning the mounting bolts with two wrenches. Those 4 bolts seem real long doing it with wrenches. BTDT
Get the swap done. See how far the speedo is off. Then we can go after that problem.

Well got the pedals swapped, and the master cylinder in my truck! Ordered new trans mounts, clutch release bearing assembly, slave cylinder, and the front seal for the input shaft (which was a PITA to get by the way) got a brand new clutch from the owner of the donor truck too. The fly wheel looks to be in good shape, any opinions on that? Plus a question off topic but what would you recommend for a tach kit?

Well a Tach for your 90, Non-IC truck, will have to use the magnets and magnetic pick up off the crank, or the kit that runs off the alternator.
You can order an Isspro Tach, and magnetic pick up kit from Geno's. I have have had good service from Geno's and would recommend them.
Here's an example of what you can order.

There are other gauges available too. Just do a little searching for the one that you like best.

I have an un known brand tach with a Stewart Warner magnetic pick up on the balancer. it is tougher than it looks. mine got knocked out of place when a fan belt came apart. I bent it back and it works fine.

I used Mobil 1 5W-30 last month when I was installing some transmission cooler plates on my Getrag.
IIRC it is 4 QT to fill it to the fill plug, then it is best to add another QT.
I have used the upper PTO bolt hole to squeeze in the last QT.
I have also poured it down the shifter hole once it has been pulled out.
