what is this called?

Oscar,
I'm going to say this as politely as I can but if you're running without gauges and still asking for help as to whats the best way to modify your p-pump, then you're beyond this forums help.
Simply put, if you keep driving your truck without gauges you WILL blow your motor up. Now tell me this, is spending thousands of dollars on a rebuild and probably a new block since your sky-high egt's will likely score the block beyond repair worth the extra smoke and power for the time being?
Sure, these motors are VERY stout when it comes to abuse. However, if you don't have gauges I can only assume you aren't prepared for the extra fuel.

I agree with Shawn 110%. Gauges Gauges Gauges. They should be the first mod you do. My father has an old farmer friend with a 98.5 he put a power puck on not to long ago no gauges. Last I heard it was in the shop. My guess is a dead LP and VP but it could be worse. Minimum gauges for a 24 valve are EGT and fuel pressure Boost is also nice but not mandatory. YET…….

Its tough to say, but considering you've got completely wide open fueling, you're probably pegging the EGT's every time you lay into it which means you're most likely doing damage. Again, without gauges its impossible to tell.

Stock charger + plateless is a recipe for a meltdown if your not careful. The money that was spent on the stacks should have bought the gauges instead, but,I understand its not my truck and stacks are Texas thing.
As for the plate vs no plate arguement...
Tuned 12v with a custom 100 plate with a small set of home built street twins(HX35/HT3B)on it did back to back runs to settle this. The difference on his truck was not significant enough(less than 15hp)to even get excited about.Heat however if my memory serves me right was an issue with no plate.

you are running a risk of burning you truck up very easy. no plate or even you plate moved full forward and or running a better plate you can send your EGT's to high melt the turbo or worse a piston.
power is fun yes ! but buying a new motor is costly !
get guages then you know what is going on before you blow you truck up.
these are not cheap like a small block chevy !

but you sure do see a lot of them so i won't argue that statement

Running plateless will not hurt the pump. Running a 100 plate is probably more beneficial then running without one, so there really is no reason to take out the plate. With that being said, if the afc foot is not modified it is the limiting factor in rack travel with even a 100 plate. With the plate removed, and the afc foot still in place it will limit the rack from traveling too far and supposedly breaking the pin in the pump. Not saying that it will never happen, but I have never seen nor heard of hard evidence that a p7100 has ever failed because of excessive rack travel, while I have heard and tried running no plate myself and have not had any problems.
On a side note, leave your plate in there and modify your afc for maximum travel and you will have a much cleaner, better running pickup.

running plate less you gain little if the afc arm is not modified. and or is still in the pump. then you can add a rack plug but it will not do squat because the afc will not let it travel that far unless it has been modified is what i was meaning in that post ! yes mine is hacked up and a rack plug really is not much gain on a 180hp pump ! and i run a 100 plate. 5x12 injector,.020 dv's and .075 barrels and i need a better turbo. but i get pleanty of fuel and i don't think running plate less would give me more in fact i had a 0 plate and it fuel way to hard down low to be any fun .
again to much fuel makes lots of smoke ! smoke = unburnt fuel.
now a slight haze is just about right. and yes with no boost i can black out a 4 lane highway but then you don't feel the power come on until boost hits.
cleaner=making power
so unless you are running a dyno truck to hit big numbers
or a drag truck on the street you really need a plate
and as you posted you saw little gain from running with out VR's with one.

ur gonna hate yourself for what you are doing, If plates are so bad then why do ppl with high hp run them?
My trucks under the knife but with what i had done to it recently i know it was at 500 horses or better..
