what is this called?
I have a 1998 Dodge Ram 2500 (12 valve) auto 4x4 with a K&N Cold Air Intake, 6" stacks and here at a local shop in Laredo, Texas we removed my fuel plate for more power and i was wondering what do i call this like when people ask what i have in it, cause some people put like #0 plate etc. so what would i call this? Thanks

A "0" plate is a custom ground plate. You simply have no plate. There are a lot of knowledgable people here that will tell you not to run without a plate.
There is a component within your P pump called a "rack". The rack will get damaged without a plate to ride against. The rack travels too much without the plate and causes other problems with time.
Look around and you will find pics/drawings of different plates. The zero is simply straight up and down.
Don't take my word for this, do your own research and make educated decisions. Also, without gauges, you could be burning a piston easily with excess EGT's.

Remove the plate your afc will limit your rack travel, remove both the plate and afc, the plug at the end of the rack will limit rack travel. Running a 0 plate is the same thing as running no plate.

the AFC will limit your rack travel but with no plate you could slip off it and bind the linkage. a Zero plate is not the same as running platless a Zero is simply a plate ground flat on the front ! you can still have more rack travel left even with the zero plate full forward ! the reason is you run plateless the rack has a pin in it if you allow it to go to far it can put that pin in a bind. as well as take a good beating hitting the rack lug with nothing to slow it down.
Also most guys who run plateless also remove the AFC arm anyway. and for you to safely run a #0 plate you also need to make sure your gov arm is adjusted so it does not end up under the plate as well.

Running plateless will not hurt the pump. Running a 100 plate is probably more beneficial then running without one, so there really is no reason to take out the plate. With that being siad, if the afc foot is not modified it is the limiting factor in rack travel with even a 100 plate. With the plate removed, and the afc foot still in place it will limit the rack from traveling too far and supposedly breaking the pin in the pump. Not saying that it will never happen, but I have never seen nor heard of hard evidence that a p7100 has ever failed because of excessive rack travel, while I have heard and tried running no plate myself and have not had any problems.
On a side note, leave your plate in there and modify your afc for maximum travel and you will have a much cleaner, better running pickup.

what is the acomplishment of running without a plate? most of the time all you get is a black cloud. if thats all you are going for then be my guest. but if you're building for HP then get your pump set up right and use the fuel. think about it when you take your pump to get it flowed for more cc's do they leave the plate out?

Well as of now i dont have gauges im saving up for some but once we removed it there was a big difference in the trucks power, i was amazed but like now im not sure wether to keep it or just remove the afc arm what do you all think? Thanks
