12 valve low porer, high egt

Hi All, New poster here. Hope my questions aint too simple.Trying to learn how to get better performance outta my 94 12 valve. For background: 1. I have a motorhome, not a truck. Weighs 22,500 pounds. Powered by 94 12 valve intercooled turbo, originally rated at 235 hp. Bought this in 2012, blew engine on first trip, rebuilt engine myself in 2013. Sent the turbo and the injectors out for rebuild at that time. Allison 6 speed transmission.. 2. Since the rebuilt, we've been across country, east and west, north and south and Canada. @ 60,000 miles. Too hot to stay home in summer... 3. We flat tow a small car, @ 2500 pounds. 4. Previous owner installed a Banks Big Horn turbo waste gate controller. He may have messed with the injector pump ( Bosch P7100) as well. I blow black smoke under load at altitude but pass emissions every year here in Phoenix. I installed an exhaust gas temperature gage. My tires are @ 1% larger in circumference than the originals. 5. I have some driveability issues that I'd like to learn about. Since we can't go anywhere without climbing, we always are governed by egt more than anything else. Can't keep the rpms high enough to avoid high egt. I end up backing off at 1100F, coasting uphill until the tranny will accept a downshift, and end up crawling along at 25mph in 2nd gear. We can run all day on flat terrain at 800F, but hill climbing is tough and slow. Coolant and oil temps remain in normal range. Tranny rairly passes 180 degrees. And, more altitude makes performance eve worse. So, where do I start to make sure I'm getting all I can expect from this motor without damaging it?
Suggestions on where to start and what to check would be appreciated. Thanks
